UYYU Group works below Agromeals platform, a Uruguayan company dedicated to the production, logistic and beef trading. We have a vertical integration from the farm to the fork. UYYU Group started a wagyu production program in 2006 by importing Black Wagyu embryos from Australia. After a decade of work and progress, it has developed an advance wagyu breeding program and now carries 400 Full Blood Tajima Breed Females wagyu. The Tajima bloodlines, originally centered in Kobe are generally regarded to produce the best quality meat in all Japan. These full blood females are helping to drive the breeding program. Our group of professionals coordinates the cross breed (between Wagyu – Angus) F1-F2-F3 breeding, production and the cattle fattening program at the feedlots, processing at the plant and sales.

”We select animals with a high percentage Tajima blood through a careful study of the pedigree, looking for a good growth and conformation, but without affecting the marbling and the merits of the carcass. We use and constantly generate new selection systems, with quantitative tools and genotypic (DNA) evaluations. In this way, we look to maximize marbling and adapt to natural production standards.”
Marbling Standards
The BMS is set on a scale from 1-9 (Australian Scale) based on the percentage composition of IMF. The higher the grade, the higher the level of IMF. The combination of exquisite flavor, tender beef and the presence of healthy attributes means Wagyu beef is highly sought after, especially in leading restaurants around the world. Marbling is a key driver of quality and value. The use of high-quality full blood Wagyu genetics is critical to achieve the best quality Wagyu beef. The higher the percentage of Wagyu genetics in the animal, the greater the potential to produce meat with marbling scores.
